Mini Baked Egg Casseroles

I very rarely cook, but as I’m shifting my eating habits that’s looking less and less sustainable. (Especially now that the restaurant I went to for lunch has unfortunately closed.) As a way to try and get myself cooking on a regular basis, I borrowed the Wheat Belly cookbooks from the library. I don’t like spending a lot of time cooking, so I’ve decided to go with the 30 Minute (or Less) Cookbook. I’m going to try and make as many of the recipes as I can before I lose interest J

These probably won’t be regular posts, as I may have to skip days, and some of the recipes will get me more than one meal. But for now, here we go.

Mini Baked Egg Casseroles

I chose these ones since it looked pretty easy, and it was.

Substitutions/Changes:

  • I only made 6, as I don’t have an 8 cup muffin tray.

American to Canadian:

  • I bought Back Bacon for the Canadian Bacon.

Prep Time: 5 minutes. I didn’t think to time this, until after I put them on to cook, so I’m going with the book time.

Cooking Time: 18 minutes. That’s 3 minutes over the cooking time in the book.

Total Time (start to plate): 25 minutes.
